Every morning I wake up wishing I were somewhere exotic, although San Francisco is pretty groovin’. At times I like a taste of the tropics, and other times I enjoy a little zen. A fusion of these two equates to an irresistible coconut matcha green tea smoothie. I absolutely love a light, unique blend that awakens my taste buds first thing in the morning to kick off the day.
Nutritional health benefits
Matcha touts many health benefits as well, providing more antioxidants than regular green tea and its own niche flavor. Coconuts have risen in popularity the past couple years, being known for fiber and potassium. Throw in spinach or kale as your greens, and you have a blended cup full of energy to power the morning hours.
The blenders I prefer to use for this recipe are either a Vitamix or a Nutribullet to make this chunk-free. Use a pre-frozen, sliced banana or two to make the smoothie chilled and thicker. I use 1/4 an avocado to make the recipe creamier, a handful of spinach, and one to two handfuls of coconut chips, depending on how nutty you want it to be. The below measurements can be completed more or less, depending on your individual preferences.
Ingredients
- 1/4 cup coconut chips (unsweetened)
- 1-2 frozen bananas (slice up and freeze ahead of time)
- 1 cup almond milk
- 1/4 cup fresh spinach
- 1/4 a large haas avocado (optional, for smoothness and creaminess)
- 1 tablespoon honey (optional)
Other toppings or mixtures I like to throw into my smoothie are flax meal for my Omega-3, chia seeds for fiber, and hemp seeds for more Omega-3 and fatty acids. Don’t be afraid to get colorful by adding your favorite additions in for your customized smoothie.
